Storing: Refrigerate for up to 3 to 4 weeks.

Ingredients
4 large peeled tomatoes
1 small can green chilies
1/2 green pepper
1 small onion
1/2 cup celery
1 teaspoon salt
1 teaspoon mustard seed
1 teaspoon oil
1 teaspoon vinegar

Instructions
Chop first five ingredients. Mix remaining ingredients.

Serving Suggestion
Serve with low-fat tortilla chips or any Mexican food. Also a healthy alternative on baked potatoes, or with fish, chicken or rice.
