Will these separate so jewelry can go n the hotel safe?

No, you will have to either take the jewelry out, to go in the safe or put the whole bag in the safe.

What does the inside of the bottom section look like?

Does TCS sell anything that could be used to make the bottom part for jewelry?

I'd like to DIY a jewelry organizer for the bottom part. Does TCS sell any dividers or ring rolls that could potentially fit? I'm okay with cutting to size and using a hot glue gun to glue the organizers in place.
