They also are easy to fit in any dishwasher. Though they do get warn out more quickly than heavier cutting boards, I still find the inexpensive price worth it to buy them 3-4 times a year. I'm leery of what appears to be a plastic sheet of paper being able to prevent damage to my counters when I use it the same way I would use a standard butcher block cutting board. And if it's strong enough to prevent damage from knives why am I able to actually cut this product down to a customized size with a pair of kitchen shears. In other words, why don't knives penetrate it, but kitchen shears will

Answer: 
This plastic sheet is about as thick as a 32th of an inch. You are able to cut it with sissors because you having two blades cut simulatneously from both sides.
